4 large bananas, mashed
1/2 cup sugar
1 egg, slightly beaten
1/3 cup melted butter or margarine
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp salt
1-1/2 cups flour
Mix bananas, sugar, egg and butter together in a bowl. In a separate bowl, mix dry ingredients. Mix the wet and dry ingredients together. Pour into greased muffin pan or paper cups. Bake at 350* for about 20 minutes. Yield: 12 muffins.
My family LOVES this recipe and the muffins are easy enough that I can whip them up in no time. I use even more than four bananas if I have them. The more bananas you use, the more moist and "gooey" the muffins will be.
