Pork Satay with Peanut Dipping Sauce

Prep Time: 20 minutes + marinading Cook Time: 10 minutes

1/3 cup soy sauce
2 green onions, sliced
3 Tbsp brown sugar
3 Tbsp minced fresh cilantro
3 Tbsp Thai chili sauce
2 Tbsp sesame oil
1 tsp minced garlic
1 lb. pork tenderloin, cut into 1/4-in slices
1/3 cup creamy peanut butter
3 Tbsp hot water
2 tsp. lime juice


***Family Chef's substitution: I didn't want to purchase a bottle of Thai chili sauce just for this one recipe, so I used one tablespoon of Cholula hot sauce. I could have used the three tablespoons that the recipe called for, but my kids don't like things too spicy.

Combine first seven ingredients in bowl. Set aside 1/4 cup for dipping sauce. Add pork and refrigerate for at least 30 minutes.

Drain and discard marinade. Thread pork slices onto metal or soaked wooden skewers. (For appetizer, thread onto about 20 skewers. For dinner, I threaded them onto four skewers.) Place skewers on a shallow greased baking pan. Broil 3-4 inches from the heat for 3-4 minutes on each side (or until meat juices run clear).

Meanwhile, for sauce, combine peanut butter and water in small bowl until smooth. Stir in lime juice and reserved soy sauce mixture. Serve with skewers.


These were SO GOOD! In fact, I will make TWO pork tenderloins worth of these skewers next time because I wish there were left-overs to eat tomorrow. I didn't end up making the peanut dipping sauce because (silly me) forgot to set 1/4 cup of the marinade aside. Luckily, I had a fresh bottle of the Thai Peanut Sauce from Leann Chin in my cupboard. It turned out to be perfect with the skewers! The sauce has got a kick to it, so it was the perfect spicy addition for the adults enjoying this dinner.
